There is an item in an application form: Title (it goes after items Surname and Other names). Is it about my profession? Can I write here: Teacher?

No. It's Miss, Mrs, Ms, Dr - that kind of thing. If you are an unmarried woman, and have no PhD or medical degree, put 'Miss' or 'Ms'.

In China, it is appropriate for teachers, guides, directors, etc to use their job as their official title.

In most western countries, the above is inappropriate.
