It's like an exaggeration. Its like saying, "Everything and more". Everything covers it.. But the word "more" is included for emphasis, and that is also what is happening here. "I think we've covered everything, and then some". You can consider the phrase, "and then some" to mean "more" if it helps. Its only for emphasis to show that they really did cover everything :)
