What can you say about Irish English? A lack of "Yes" and "No", what else?

As Jmat said , you are confused. Irish English is English spoken with an Irish accent, there is no difference.

I think you're mixing up Irish and Irish English. It's Irish that lacks words for "yes" and "no".
