To clarify: You tried some wine and you want to say it is the best of your life? Two ways: This is the best wine I've ever tasted. I've never tasted better wine (than this).

The only correct translation is 'It's the best wine I've ever tasted'. The word 'ever' means 'at any time'. In this case, it means 'at any time (in my whole life). The word 'never' is a negative. It is the opposite of 'ever', and means 'at no time'. For example, 'I have never tasted such good wine before.'

I agree with the other posters. Additionally, it would really change the meaning to use "never". If you say "it is the best wine I've never tasted" you are saying you have never tasted the wine.
