Hi there. If something unfolds it gradually "opens up". In the case of a week, it means "as the days go by". For example, "As the week unfolds, I begin to see how little I actually work". That is, my realization of how little I work comes on Wednesday, for instance and not at the very beginning of the week. Hope that helps!
