There is none. English spelling is strange, weird, and incomprehensible. Ask any question about English spelling; the answer is usually "it just is." In some cases, our spellings do preserve something about the way the words were pronounced centuries ago. Who knows, maybe "which" once had an "hw" sound and a puff of air at the beginning. Maybe the "ch" was some kind of guttural grunt in the back of the throat. But as of today, OxfordDictionaries.com shows us: If you consult a modern dictionary, you'll see: which /wɪtʃ/ witch /wɪtʃ/ English speakers make puns on the two words, especially around Halloween. For example, there is a children's book entitled "Which Witch?" https://en.wikipedia.org/wiki/Which_Witch%3F_(novel)
