La tienda abre/se abre a las 8. La tienda cierra/se cierra a las 8. Quería saber cuál es correcta. Si el sujeto no es tienda, sino ventana, ¿se usa de la misma manera o no?

Sí, es la misma idea! La tienda abre: the shop opens at 8/ la tienda se abre: the shop is opened at 8 (by someone). La segunda puede ser un tipo de voz pasiva o una construcción impersonal, depende el contexto

Ambas son de uso común. En el caso de ventana también se usan las dos:
-La ventana abre hacia afuera
-La ventana se abre hacia afuera
