Grammar in "works as cabin crew"
In the sentence "She works as cabin crew", is "cabin crew" just a short form of "a cabin crew member"? To my understanding, "crew" refers to a group of people, not an individual.
Is such expression considered correct in formal English?

You're right - native speakers understand it as "She works as (part of the) cabin crew".
It's just a short form that we accept. You can't apply a grammatical rule here.

No, as you mention, crew refers to a team of people working together. In formal English, I would always refer to a crew member.
