I think most Chinese use a regular ('qwerty') keyboard with the Latin letters. They type a 'romanization' of the sounds and a pop-up menu of choices of characters appears, whereby they can select one with a either a number, F1-F12, or with a mouse click. It might appear time consuming for westerners, but keep in mind that Chinese get a whole word out of two keystrokes and a click, so it's pretty fast.
