Which kind of lesson do you prefer the most?
Do you prefer to have an organized tutoring lesson about topics chosen beforehand or a more natural, casual conversation?

For me, I like both, and I think they serve different purposes. I think every student is different, and different activities can be relevant to different needs. I currently have two different French tutors on iTalki, and with one we just have a casual conversation, and with the other we do more planned conversations, role plays, etc. The casual conversations are often great because I find myself talking about things I've never tried to talk about in French before, so it really challenges me to try new things. But when I visit a French speaking country, most of my important conversations are not casual free-ranging conversations. They are short focussed conversations in shops, at ticket counters, in hotels, etc. The pressure is greater than in casual conversations, because it is very important that I get understand the main details correctly. So with my second tutor, we often role play those kinds of conversations. I'm less likely to be creative or experimental in those conversations, but it is important to me to get well practiced at handling them competently.
So I don't really have a preference. I like both and I benefit differently from each.
