A pinch of salt = getting some salt between 2 of your fingers A dollop of bean paste = similar to a spoonful but not actually measured a dash of pepper = taking a pepper container which has several holes at the top and shaking it once at the food you are cooking so some of it comes out, but not a measured amount So in your 3 examples, the writer has used these cooking words to describe someone's attitude
