É melhor usar “desfrutar” ou “aproveitar” ou “divertir” para “Have Fun!/Enjoy Yourself!”
Minha amiga me disse que ela está indo para a praia hoje. Gostaria de dizer: Have fun! / Enjoy yourself!
Mas não sei como. É melhor usar “desfrutar,” ”aproveitar”, ou ”divertir” ou algo diferente?

O mais comum é dizer: Divirta-se!
Não me lembro de ouvir alguém dizer "Desfrute".
"Aproveite a praia!" também é uma boa sugestão, porque subentendesse que você está dizendo para a pessoa: "Aproveite a praia para relaxar/praticar exercícios/surfar/conhecer alguém."; entre outras opções que a praia oferece.

aproveitar é mais comum, desfrutar é mais formal

Eu diria "aproveita' ou "desfruta". "Diverte-te" é mais para festas, atividades desportivas, etc.
