"Die Rote Beete" or "Die rote Beete" What is the correct way?
I have seen both used in different places within sentences.

Das ist ein Eigenname, deswegen: Rote Beete. This is the name of the vegetable, therefore you have to use a capital letter. If it would just be an adjective and not part of the name (der rote Apfel), you would use the minor case.
