an interesting question!
a) I gusti delle persone sono diversi. (kind of explanation)
b) Ognuno ha i suoi gusti ! (like a reminders, if needs arise)
c) We use a Latin quoting, I really like:
'' De gustibus non est disputandum ''
with the meaning: you can't talk and agree upon tastes,
as they cannot change.
In Italian: dei gusti non si discute.

In Italian we also say "I gusti son gusti" (literally "tastes are tastes" , it underlines the subjectiveness of people preferences) and "Il mondo è bello perchè è vario"(the world is beautiful because of its diversity)...

Gli italiani usano spesso qualche detto latino quando parlano. In questo caso una frase interessante sul fatto che non bisogna giudicare i gusti degli altri e che è legittimo che ognuno abbia i propri è: "de gustibus non disputandum est"
