Are these both ok? When I went on the roller coaster, I closed my eyes/had my eyes closed and screamed with my mouth wide open.

Yes. "Closed" is being used as an adjective that means the opposite of "open". The grammatical structure is exactly the same as:
"I had my eyes open and screamed."
