Cachapas with Cheese 🧀
It is a typical dish from Venezuela. It's not difficult to make, but as with most things, some people make this dish better than others. The primary ingredient is tender corn 🌽.
First, using a sharp knife, cut the corn kernels without cutting into the cornhusk.
Next, grind the kernels and collect the corn "milk" that comes out, catching it in a cup.
In a large bowl, knead the mixture while adding sugar and a pinch of salt. Also, add the corn "milk" you collected earlier.
At this point, you should have a very hot griddle or skillet. Grease it with butter and spread the batter as if making pancakes. Wait a little while and then flip the cachapa.
Now, it's time to slather the cachapa with butter and add cheese. And there you have it: a cachapa with cheese.
This dish is commonly enjoyed in August because that's when corn is harvested in Venezuela. Some people like to eat the cachapa with crispy pork rind.
