Hello Jamie, Chinese learner here. For listening I'd recommend a few searches on Youtube. I know that makes it general, but you have to find what resonates with you and not me. There are several 'easy' Chinese channels, beginner Chinese podcasts. Also there are a ton of Chinese with 'name' channels. I'll point you to two kids shows that have easy words you will recognize, Peppa Pig, and Pleasant Goat and Big Big Wolf. Just checked Pleasant Goat, a random video, random time, a character said 看起來好舒服, kan qi lai hao shu fu, looks really comfortable. (I don't have a traditional keyboard, it would look a bit different.) It's quite good for starting out. You can pause and copy the subtitles, rewind and listen again etc. This little phrase alone should bring you a lot of value. I'd recommend an SRS app or site, plenty out there so it's up to you for what UI resonates with you. I would recommend Pleco as your dictionary as it has flashcard features as well. It is very useful. With this, get at least 2 new keyboards on your phone. Add pinyin and the handwriting tool. I would make sure to copy the character with the handwriting tool first, before using pinyin if you can't get it. It'll force you in helping you to learn characters. If you're learning traditional I'd recommend learning zhuyin and use that keyboard as well. If you're not familiar with characters too much at the moment, review stroke order and placement order, a lot of great sites for this.
