Is this ok? I like holidays. It’s a time to relax and try new things. Above and beyond everything else is that we can accompany our families.

Let me suggest this rewording:
I like holidays. They are times to relax and try new things. Above and beyond everything else, they are times when we can spend time with family.
However, I would prefer to simplify your phrase "Above and beyond everything else" to this:
Above all, they are times when we can spend time with family.
"Accompany" means to go with someone or something or exist at the same time and place as something or someone. If you are specifically talking about going on vacation, i.e. travelling, then you could use it like this:
Above all, they are times when we can accompany our families on trips around the world.
I suggest this because "holidays" does not mean travelling unless you're using "on holiday" in British English (and it must have "on" to mean this).
You will have noticed that I used "spend time with family" with the word "family" all by itself, without an article. So did I break a rule? Nope! "Family" can be uncountable as well as countable.
