Of all the options you wrote the following sounds best:
I want to prioritize my family on the weekend, even though I’m still curious about the technology I work with.
You could also say: “Despite finding my job interesting, (at the weekend) my family comes first”.
When using “despite” or “in spite of” you always follow using the “ing” form of the verb.

the technology I work with. I’d rather spend time with my kids than on doing work. On
weekends, my family comes first, even if I’m still interested in the tech from
my job.

The only point I would add in terms of usage, as a native English speaker from England, is that we say AT the weekend instead of on the weekend. 😀
