Today was a beatutiful day. Oh my God it's very difficult to write in English. I don't know anything! 

You are talking in the past tense here, so today 'was' a beautiful day. Also, you would say I don't know anything' because when you say 'I don't know nothing' it means that you know something...you could write 'I know nothing' and that would be the same as 'I don't know anything' but 'I don't know nothing' is wrong as it is a double negative.
