I love Shanxi Daoxiao noodles. My hometown Taiyuan, the capital city of Shanxi province. From the early age of my life, my loved grandma has been cooking this for my whole family. The sliced noodles is strict with making the dough. Kneading dough is a key process, which makes the dough bright, soft and even. My grandma often uses a special arcuate knife to slice the dough into the caldron filled with boiling water. After the noodles falls into water and stay in it in several minutesminutes. Then, it's ready. We usually eat it with minced meat and the ketchup that is made up of eggs and tomatoes by ourselves. It's very delicious.
