"which dances interest me " is correct. Or we can say "what kind of dances ...?" To understand this, simply replace "dances" with another noun like "girls", "boys" or "books".

I agree with Qu xuemin, but in English speaking countries you will often hear native speakers use what instead of which. Bad grammar, but very common.
