When talking about machinery, “override” usually means some switch, button, or lever that allows a user to (i) immediately stop the machine, or (ii) take over control of the machine, rather than the machine running itself. For example, maybe the air conditioner normally automatically selects a temperature, but you may want to “override” the automatic temperature selection and, instead, choose the temperature yourself.
