"I pegged her as a total bore when she first started working here, but since getting to know her, she's actually pretty interesting." # Would the meaning of the sentence change if I rephrase it like this? 1. ~ but since I've gotten to know her, ~ 2. ~ but since I got to know her, ~ # Is there any nuance difference between them?

The example from the dictionary shows the process with meaning "starting to know with every day". Your examples show the performed result without continuation with meaning "after I have known".
